coconut bacon

smoky, salty and delicious, this bacon alternative is amazing as a crunchy topping on a variety of dishes. i use them here in my mushroom and spinach carbonara. they're so good, the streets needed a stand alone recipe.


coconut is a great source of fat and MCTs, which aid brain health.


these can be made raw in a dehydrator or baked in an oven.


sometimes i even eat these like crisps...



serves 5


ingredients:


2 cups coconut flakes

3 tbsp liquid smoke

1tbsp nutritional yeast

3 tbsp smoked paprika

1 tbsp tamari or soy sauce

1 tbsp maple syrup or agave

1 tbsp oil (i use avocado)

sea salt and black pepper (pinch)


method:


  1. if you are using an oven, preheat it to 162ºC/gas mark 3

  2. mix together all the ingredients for the coconut bacon. use your hands to make sure everything is properly combined.

  3. spread out on a baking tray (lined with baking paper) and place in oven. after 5 minutes stir to make sure it's evenly cooked and cook for a further 7 minutes. remove from the oven and leave to cool.

dehydrate for 6-8 hours until crispy.
