traditionally served at christmas, this recipe is sweet and refreshing and perfect for summer BBQ's. sorrel also has great health benefits. Unlike most sorrel recipes, I like to keep it raw.

5 cloves
1 cinnamon stick
Sparkling water
method:

2. in a large pot, combine with all other ingredients except the lime and sparkling water and leave to simmer on a very low heat for an hour. to keep it raw you can alternatively steep covered in the fridge for 4-6 hours, or overnight.
3. strain the mixture, reserving the liquid.
4. fill up a glass half way and top with sparkling water. Sweeten to taste if necessary.
serve over ice with a slice of fresh lime.
